You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two typical Italian sauces. The experience includes a delicious tasting of local cheese and Italian Prosecco. We can also accomodate GLUTEN allergy guests and VEGAN guests for a very tasty fresh pasta. Throughout the years, we have mastered different mosaic techniques, both traditional and modern. That is why you will find the studio full of original tools, sketches by famous Italian artists, and important mosaics masterpieces. The workshop will begin with an introduction to Roman mosaic technique and history. Afterwards, you will practice the principles of texture, composition and marble tile cutting to create your own mosaic to take home. It is fundamental to us to transfer the real techniques of Roman Mosaic craft. Therefore, your mosaic will be correct and based on Ancient mosaic rules. The final result is your own personal mosaic to take home that will be approximately 7” x 5”, weighing 14 oz. A master mosaicist will share important tips, and provide the assistance you need to ensure the best result. This is a full immersion work experience. You are going to work in an authentic mosaic studio and handle specific tools. For safety reasons, we recommend starting this experience from 12 years on.

We'll have a day trip through the woods north of Rome, hunting truffles with the help of trained dogs, we will pass through areas rich in history of outstanding natural beauty. After the trip we will go to have lunch at my house, we will learn how to cook truffles dishes and we'll eat them for lunch with a very good wine. I will cook for you many different courses, all with fresh truffles! You will can taste many different combinations with fresh truffles! What shall we do.. Then we stop to have the best coffee in Rome in a very popular bar, we drink a glass of wine from the bottle that waits for us in a picnic basket behind the car and then the famous Italian ice cream. We drive through the romantic alleys where many shops are located , in the air we can smell the inviting aroma coming out the restaurants that serve typical Roman dishes. At each place, we will get pictures taken by the staff or from me. Each stop will be 10-15 minutes and the guests are free to visit the locations alone if they wish so.. During this experience you'll be able to immerse yourself in my family long time farm history. It will be my pleasure welcoming you with a cup of coffee before visiting our cellar and garden where we'll pick some vegetables to use for the class. Then we'll jump to the kitchen and put our hands in the dough or, using an Italian expression, "mettere le mani in pasta". I'll explain and provide the ingredients needed, their proportions, the full process and methods included all the tricks and how to use all the necessary tolls. Then we'll prepare the sauce using ingredients from our farm, in particular our organic vegetables. After making the tagliatelle and ravioli , it will be time to make the typical Italian cake 'tiramisù' following the recipe of my great grandma. We are now ready to enjoy a delicious dish of handmade tagliatelle accompanied with a nice glass of our organic wine and finally the amazing tiramisù. This experience also includes a pice of our homemade limoncello. All the food will be prepared and served with our own organic extra virgin olive oil. We'll drive to our 12th-generation winery, Wich is not open to the public, in the gorgeous wine country of Chianti Classico DOCG Denomination of Controlled and Guaranteed Origin. Explore the farm with ours kinds pets like truffle dogs, cat, chickens and pig (prosciuttina) and winery whit the owner winemaker and learn about the history of this 12th-century artisanal winery. Be prepared to live a unique experience, in contact with dogs and nature! Take a break from the city chaos that fills our days every day. After an introduction to the world of truffles, we will begin our hunt. You will see how the trained dogs hunt for truffles and the passion they have, this being a very rewarding activity for them. Depending on the period we will go to different types of woods and the meeting point may change. Truffle hunting is also accessible to children (my dogs will be happy to play with them!). After the truffle hunting we will have a lunch with truffle dishes. The menu is vast so I don't suggest you have a big breakfast! We also have menus for vegetarians, celiacs, vegans and we can also change it according to your allergies or intolerances. During lunch we will have the opportunity to get to know each other better, drinking good wine and eating fresh seasonal truffles. Other things to remember. Long, comfortable trousers are required (ankles must be covered). I also suggest wearing a pair of boots. If you don't have them, sneakers are fine too.

In the morning, with me and my husband, we will visit a winery located in an area with a beautiful scenery, where we will learn all the secrets of Prosecco wine making and taste some glasses of this famous sparkling wine! We will then visit a local Osteria lost in the middle of the hills, and will have an aperitivo in front of the vineyards, while listening to the delightful singing of the birds! We will meet my family, while enjoying a typical lunch in our family owned osteria, where traditional dishes are prepared using our grandma's recipes, and where the typical "spiedo" meat cooks slowly near the fire! All desserts are home made by my brother and are really a sweet end of a delicious 4 courses meal! We will visit a second winery, where we will meet friends that run a very high quality DOCG Prosecco winery and produce wines using ancient types of vines and lots of passion! I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. In this newborn experience you will create, all from scratch, your homemade 5 shapes of fresh pasta in a "Antica Osteria" founded in the late 1800s and recently converted into cooking school. You will taste your own pasta, with two different kind of italian fresh sauce, created and explained by the chef, immersed in a magical atmosphere between past and present. You will make the thin dough sheet with the rolling pin professional technique, safe food cutting procedures, realization of ravioli, agnolotti, tortellini cappelletti and fettuccine. The experience includes a delicious tasting of local cheese with fresh prosecco. Pedal up to the top of the Campidoglio hill where you will admire one of the most striking panoramas at sunrise of the eternal city. Rome always has its charm but the Fori Imperiali, Campidoglio, and Circo Massimo when the city is still asleep provoke unique emotions that you must experience at least once in your life! Next stop breakfast! If you have never heard of Sant’Eustachio Il Caffè, It is the most exclusive place for breakfast in Rome! Come along for an after-dark stroll to explore some of these tales of Rome. We begin in one of Rome's liveliest squares, now full of bars and restaurants. However, it was once a place of execution, and reminders of this still stand - hear the tale of Giordano Bruno, one of Italy's greatest minds who got on the wrong side of the Church. Then we stroll through the backstreets, arriving at one of the oldest bridges, which is haunted by one of Rome's most infamous characters. Strolling down a medieval street, we come to a unique church, home to a mysterious order of monks with a rather macabre task. From here, we reach the site of one of the world's most notorious historical prisons, then pass the tomb of the notorious Borgia Pope, before arriving at the home of an infamous poisoner. Soon, we reach Castel Sant'Angelo, where we talk about one of Rome's most famous executions, which the city's people didn't want - the Cenci family. Altogether, it's a fascinating alternative look at Roman history. Other things to note: It's an easy walk, lasting about 2 hours. We end close to some nice bars and restaurants.
